Tonight we made quesadillas and they were a big hit. This is the perfect meal to get your kids involved. Tonight I served it with my emergancy quick guacamole and sliced fresh nectarines. We used a panini maker. INGREDIENTS: Blue corn tortilla (non-gmo), vegan chicken tenders cubed, Daiya cheese or vegan garlic and herb cream cheese, salsa or spaghetti sauce. Preheat panini maker and lay out ingredients.

One of my greatest joys is gardening with my children. It is "Put'n Up Time" as we country folk say in the South. That means we are busy canning, drying, and preserving the harvest for winter meals. Today we started harvesting beans. Today's star was dragon tongue beans. They are easy to grow and are great solo or in soups and stews. Our southern garden loves them.
